[摘要]
茶多酚是茶葉中一類具有強(qiáng)抗氧化作用的多酚類化合物的總稱,具有抗氧化、抗炎、抗腫瘤、抗輻射、抗病毒等多種藥理作用,其含量對茶葉的品質(zhì)有非常重要的影響。但是,茶多酚結(jié)構(gòu)復(fù)雜,不易準(zhǔn)確測定,制約著對茶多酚的深入研究。綜述近年來國內(nèi)外對茶多酚的分析測定方法,重點(diǎn)闡述滴定法、紅外光譜法、分光光度法、高效液相色譜法、氣相色譜法等研究方法的應(yīng)用和進(jìn)展,為進(jìn)一步研究提供參考。

Tea polyphenols belong to one class of strong anti-oxidative polyphenolic compounds in tea, which have anti-oxidative, anti-inflammatory, antitumor, anti-radiation, antivirus, and other pharmacological effects, and the contents are very important for the quality of the tea. However, the complex composition and difficulty of accurate determination restrict the further study of tea polyphenols. This review introduced the applications and progress of the domestic and foreign analytical methods in recent years, emphasized the titration method, infrared spectra method, spectrophotometric method, HPLC method, and GC method, so as to provide the reference for the further studies in the future.
